To Make In Advance

If you want to make this easy crockpot lasagna recipe in advance, here’s a few helpful tips:

  • Follow the recipe instructions up to step 5, but do NOT add the broken noodles (you can add the spinach if you wish or stir it in individually). Let the soup cool to room temperature and store in the fridge or place in freezer for up to 3 months.
  • When ready to serve, you can reheat the soup on the stovetop or in the Crockpot. Add in the broken noodles and cook until noodles are tender. Or, you can cook the lasagna noodles separately and add them in when ready to eat.

FAQ: Crockpot Lasagna Soup

Can I freeze this soup?

Yes! This soup can be frozen in freeze-safe bags or an airtight container for up to three months. However, I recommend not adding the noodles and waiting until you are ready to serve. When ready to serve, heat the soup and add in the noodles separately right before serving. Also, I recommend waiting to add the cheese until right before serving as cheese does not freeze and thaw well.

Can I make this soup on stove top?

Sure! Just brown the beef and onion in a large dutch oven or large pot. Then add in the marinara, tomato paste, seasonings and beef broth. Let simmer for 20-25 minutes. Then add in your broken noodles and cook until the noodles are tender and cooked through. Stir in cheese, top with cheese and enjoy!

Why did my soup get so thick overnight?

If you are eating leftover soup the next day, you might notice that the noodles have absorbed some (or almost all) of the liquid. You can easily add more broth in when reheating to make this soup more “soupy” or if you know you are going to be meal prepping this lasagna soup recipe or eating leftovers, you can alternatively choose to leave the noodles out when initially cooking and prepare them separately. Then just add the cooked lasagna noodles as you wish.

FAQs

How to fix soupy lasagna? ›

How to make non-runny lasagna? ›

Whether you're making a tomato and meat sauce from scratch or using a jarred sauce, you can thicken it with cornstarch to prevent the problem of a soupy lasagna. Cornstarch is a classic binding ingredient that won't affect the sauce's flavor and is much more effective than flour.

How to stop a slow cooker from being watery? ›

Prop the lid up for evaporation.

While your dinner cooks, prop the lid open a bit so that moisture can escape and thicken the stew naturally without extending the cooking time too much. Skewers or chopsticks between the lid and the crock of the slow cooker work well for this.

How to thicken lasagna without tomato paste? ›

Cornstarch: Make a slurry of half water, half cornstarch and whisk until smooth. Cornstarch is a powerful thickener, so start by whisking in no more than 1 tablespoon of the mixture per 2 cups of simmering sauce; stir and simmer for 2 minutes, check the thickness, and repeat with more slurry as needed.

What makes lasagna watery? ›

Watery tomatoes aren't the only culprit for soupy lasagna: Oils from cheese and meat and water from lasagna noodles and vegetables can affect your lasagna's consistency. Draining excess fat from ground beef or sausage before adding it to tomato sauce is imperative to maintain a thick sauce.

How to stop lasagne from being sloppy? ›

How can I keep lasagna from being a mushy mess? The best way is to keep your ingredients dry. Cook your pasta sauce long enough to boil out most of the moisture so the sauce is thick.

How do you keep lasagna from running? ›

A helpful technique can prevent this pitfall from sabotaging your lasagna: Reduce your sauce to thicken it before pouring it into the casserole. A thin sauce runs right off of cooked lasagna noodles, causing all the layers to slide off of each other, as well.

How to make lasagna firmer? ›

The lasagna can (and should) rest before eating.

Yes it's tempting to cut into the lasagna right when you pull it from the oven, but let it rest on a cooling rack for at least 15 minutes. This will help firm up all the layers and make it much easier to slice a square.

How to avoid watery vegetable lasagna? ›

Cook your vegetables separately.

It's also important not to overload you vegetable lasagna. Having a proper amount of vegetables will help the lasagna maintain its shape, and will keep everything moist, but not watery. As you're creating layers, don't worry if it looks more sparse than you'd think.

How to thicken soup in a crockpot? ›

Mix together 2 tablespoons each of water and cornstarch. Turn the crockpot to High, stir in the water/starch mixture, cover and cook about 15 minutes until the stew comes to a boil and there's no taste of raw starch. The easiest way and a great shortcut is just add some instant mashed potato mix.

Does taking the lid off a slow cooker thicken the sauce? ›

Take the lid off

Place the cooker on a high setting, and open the lid for 30-45 minutes to let excess moisture cook off. The liquid will reduce, leaving you with a thick and delicious gravy or sauce. (Tip: This trick can also be applied for thickening stews, or when you've accidentally added too much liquid.)

How do you thicken liquids in a slow cooker? ›

As a rule of thumb, dissolve 2 parts cold water and 1 part cornstarch. Add the slurry to your sauce as it simmers in the slow cooker.

Why add tomato paste to lasagna? ›

A good tomato paste helps to thicken but also adds a sweet and savory umami flavor. Lean Ground Beef: Lean beef adds a robust and hearty meatiness that's essential in a classic lasagna recipe.

What if I don't have tomato paste for lasagna? ›

You don't have to dash out to the store if you're out of tomato paste; tomato sauce and tomato puree are both an excellent substitute. For every 1 tablespoon of tomato paste needed, use 3 tablespoons of tomato puree or sauce.

How to fix dry lasagna? ›

My Crockpot lasagna is too dry and doesn't have much flavor. Any way to fix it? You can add more tomato sauce or wet ingredients, and salt, and pepper to add moisture and flavor.

How do you firm up lasagna? ›

Just like steak, you need to allow the lasagna to rest before slicing into it. Resting or letting it cool for a good 10 to 15 minutes at least allows the heat to dissipate, the ingredients to settle from its bubbling state in the oven, and firms up the cheese that you added on top.

How do you fix soupy sauce? ›

Use Flour and Water

Combine 2 tablespoons flour with every 1/4 cup cold water and whisk until smooth. Add the mixture to your sauce over medium heat, and continue to stir and cook until you've reached your desired consistency. Test with a spoon.

How do you fix a soupy casserole? ›

Experiment With Pasta Or Grains

Just because your casserole is starting to look a bit soupy doesn't mean it's beyond saving. In fact, all you need to do is add some pasta noodles or grains to your base. This trick works for the simple reason that both types of ingredients soak up water as they cook.
