Whether you’re low carb or simply like a good healthy veggie, I’m on a mission to show you the best way to cook each of them in the oven. So today, let me show you how to roast broccoli perfectly — browned on the outside, tender on the inside. Follow the tips below and you’ll have the best roasted broccoli every time (then try roasted broccoli and cauliflower or roasted Romanesco)!

Along with broccoli cheese soup, this is one of my favorite easy broccoli recipes ever. Often, simple is best. If you want to try a different cooking method, sauteed broccoli or air fryer broccoli are other great options for a basic broccoli side dish.

  1. Arrange. Spread thebroccoli in a single layer on an extra large baking sheet (this one is the perfect size). You can line the pan with aluminum foil or parchment paper if you like, but with the pan I use, I don’t find this necessary.
  2. Bake. Roast broccoli until tender and browned on edges.

Roasted broccoli will typically take about 17-20 minutes at 400 degrees F, but can vary slightly based on oven temperatures and the size of the broccoli florets.

Tips For The Best Roasted Broccoli

  • Cut uniform pieces. This ensures that the broccoli cooks at an even pace and you don’t end up with some small pieces that are burnt and some large pieces that aren’t fully cooked.
  • Don’t cut florets too thick. Thinner florets maximize browned edges.
  • Use enough oil. No skimping! The oil gives the broccoli flavor, but it also helps the florets get browned and crunchy. I recommend 2 tablespoons oil per bunch of broccoli. This recipe uses two, so 1/4 cup of oil.
  • Every broccoli floret should touch the pan. Make sure the broccoli is evenly spread out on your baking sheet and in a single layer. We want to roast it, not steam it. Use two pans if you need to.
  • Add the garlic at the right time. If you opt to use fresh minced garlic, it’s best to add it at the end of cooking, or it will burn. Add it in during the last 5 minutes of cooking. If you want to skip the fuss of adding it toward the end, use thinly sliced garlic instead.
  • Choose the best oven temperature for roasting broccoli. This oven roasted broccoli works best when the broccoli is cooked at a high temperature (400 degrees F). It helps it get browned and crispy, not mushy.

Can You Roast Frozen Broccoli?

Yes, you can make roasted frozen broccoli. However, it may not end up as brown and crisp-tender, as it’s going to release water as it roasts, but it is an option. You may need a few extra minutes in the oven if you roast frozen broccoli.

Roasted Broccoli Variations

The ingredients and instructions above show the most basic roasted broccoli recipe, but you can easily mix it up with these variations:

  • Minced garlic: Replace the teaspoon of garlic powder with four cloves fresh minced garlic. This will burn more quickly, so add it toward the last 5 minutes of cooking.
  • Sliced or smashed garlic: If you don’t want to have to add something mid-roasting but still want to use fresh garlic, use very thinly sliced garlic instead. This can withstand the heat while roasting broccoli, so you can add it together with the broccoli right away.
  • Garlic parmesan: To add parmesan cheese to this oven roasted broccoli recipe, simply follow my recipe for roasted broccoli and cauliflower (you can make it with only broccoli if you like) or simply sprinkle on some grated parmesan at the end.
  • Lemon: For some zing, add 1-2 tablespoons of lemon juice or 1 teaspoon of lemon zest to the bowl before roasting. Alternatively, a squeeze of lemon juice after roasting also works nicely.
  • Balsamic: The addition of 1-3 tablespoons of balsamic vinegar works well with the olive oil already being added. You could also add a drizzle of balsamic glaze at the end.

Storage Instructions

  • Store: Keep any leftover roasted broccoli in the refrigerator for 3-5 days.
  • Reheat: For best results, reheat the broccoli in a 400 degree F oven, but the microwave will work if needed. You can also reheat broccoli in the air fryer.
  • Freeze: Freeze roasted broccoli in a single layer on a sheet pan and once it’s frozen solid, transfer to a freezer bag. From there, you can reheat from frozen (no need to thaw first).
